Ingredients
  

  • 2 medium apples, peeled and cored
  • 2 large eggs
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/6 teaspoon salt
  • 2–3 tablespoons maple syrup, optional
  • Sugar-free chocolate chips, optional
  • Chopped walnuts, optional
  • Peanut butter swirl, optional
  • Espresso powder, optional

Method
 

Preparation
  1. Preheat oven to 350°F / 180°C and prepare a 7x7-inch baking pan by lining it with parchment paper.
  2. Place peeled and cored apples, eggs, cocoa powder, baking powder, vanilla extract, and salt into a blender.
  3. Blend the mixture until the brownie batter becomes completely smooth.
  4. Taste the batter and mix in maple syrup if additional sweetness is preferred.
  5. Transfer the batter to the lined pan and spread it evenly with a spatula.
  6. Add sugar-free chocolate chips on top of the batter if using.
Baking
  1. Bake the brownies for 20–27 minutes until the center is mostly set, remains slightly soft, and a toothpick inserted into the middle comes out with moist crumbs.
  2. Allow the brownies to cool completely in the pan before slicing so the texture can finish setting.
Chilling
  1. Refrigerate the brownies for 1–2 hours before serving if a denser fudgy texture is desired.
