Preparation
- Combine soy sauce, vinegar, sugar, cornstarch, and pineapple juice in a small bowl, whisking until the mixture is smooth.
- Season the diced chicken breast with salt and black pepper.
Cooking
- Warm vegetable oil in a large skillet or wok over medium-high heat.
- Add the seasoned chicken to the skillet and cook for 5–6 minutes, stirring as needed, until browned and the chicken reaches 165°F / 74°C.
- Add the pineapple chunks and chopped bell peppers, then cook for 3–4 minutes until the peppers are slightly softened while remaining crisp.
- Whisk the sauce mixture again, then add it to the skillet with the chicken, pineapple, and peppers.
- Stir continuously for 1–2 minutes until the sauce thickens and coats the ingredients with a glossy glaze.
Serving
- Finish the sweet and sour chicken with optional green onions, sesame seeds, and chili flakes before serving.
- Serve immediately over rice or noodles.
Notes
Pat the chicken dry before cooking and avoid filling the skillet too much at once to help the chicken brown evenly.
