  • 1 cup cooked rice
  • 1 cup cooked chicken or black beans
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 tablespoon taco seasoning
Toppings and Serving
  • 1 avocado, sliced
  • 1 cup shredded cheese
  • Fresh cilantro for garnish
  • Lime wedges for serving

Method
 

Preparation
  1. Prepare the rice according to package instructions if it is not already cooked.
  2. If using chicken, confirm the cooked chicken has reached 165°F / 74°C before combining it with the bowl ingredients.
Assembly
  1. Add cooked rice, cooked chicken or black beans, corn, black beans, and diced tomatoes to a large bowl and mix to combine.
  2. Add the taco seasoning and stir until the mixture is evenly seasoned.
  3. Portion the seasoned rice mixture into serving bowls.
  4. Place sliced avocado and shredded cheese over each bowl.
  5. Finish with fresh cilantro and serve with lime wedges.
