Preparation
- Warm olive oil in a large soup pot over medium heat. Add the chopped onion and cook for about 5 minutes until softened.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the diced carrots and celery, then cook for 5 minutes until they begin to soften.
Cooking
- Mix in the diced Yukon Gold potatoes and corn with the vegetables.
- Add the vegetable broth, dried thyme, salt, and black pepper. Bring the soup to a gentle boil.
- Lower the heat and simmer uncovered for 15 minutes, or until the potatoes are fork-tender.
- In a separate bowl, whisk the heavy cream and all-purpose flour together until smooth.
- Gradually add the cream mixture to the soup, stirring until incorporated and the broth starts to thicken.
- Add the frozen peas and Dijon mustard, then simmer gently for 5 minutes until the soup reaches a creamy consistency.
Serving
- Remove the soup from the heat, allow it to rest briefly, top with fresh parsley, and serve hot.
Notes
For a thicker soup after storing, gently reheat and add extra broth, milk, or cream as needed.
