Soup Base
  • 4 cups vegetable broth
  • 1 cup diced Yukon Gold potatoes
  • 1 cup frozen peas
  • 1 cup corn
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
Creamy Thickener
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
Seasoning and Garnish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish

Method
 

Preparation
  1. Warm olive oil in a large soup pot over medium heat. Add the chopped onion and cook for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Add the diced carrots and celery, then cook for 5 minutes until they begin to soften.
Cooking
  1. Mix in the diced Yukon Gold potatoes and corn with the vegetables.
  2. Add the vegetable broth, dried thyme, salt, and black pepper. Bring the soup to a gentle boil.
  3. Lower the heat and simmer uncovered for 15 minutes, or until the potatoes are fork-tender.
  4. In a separate bowl, whisk the heavy cream and all-purpose flour together until smooth.
  5. Gradually add the cream mixture to the soup, stirring until incorporated and the broth starts to thicken.
  6. Add the frozen peas and Dijon mustard, then simmer gently for 5 minutes until the soup reaches a creamy consistency.
Serving
  1. Remove the soup from the heat, allow it to rest briefly, top with fresh parsley, and serve hot.

Notes

For a thicker soup after storing, gently reheat and add extra broth, milk, or cream as needed.
