Preparation
- Heat extra virgin olive oil in a large soup pot over medium heat, then cook the diced onion, diced carrot, and a small pinch of salt for about 5 minutes until softened.
- Add minced garlic, tomato paste, and dried mixed herbs to the pot and cook for about 1 minute, stirring until fragrant.
Cooking
- Add white beans, canned tomatoes, vegetable broth, fine salt, and black pepper, then bring the mixture to a gentle simmer.
- Partially cover the pot and simmer the soup for 20–25 minutes until the beans are tender and the flavors have developed.
- Blend about one-third of the soup with an immersion blender if a creamier texture is preferred, keeping some beans whole for texture.
- Remove from heat and stir in grated Parmesan cheese, chopped fresh parsley, and lemon juice, then adjust seasoning as needed.
Serving
- Ladle the White Bean Tomato Soup into bowls and serve warm with bread, croutons, or toasted focaccia if desired.
Notes
For a thicker texture, blend a portion of the soup while leaving some whole beans intact.
