- Warm the olive oil in a large soup pot over medium heat. Add the onion, garlic, carrots, and celery, then cook for 5–10 minutes until the vegetables soften.
- Add the potato, corn, diced tomatoes with their juices, broth, thyme, oregano, salt, and pepper. Bring the mixture to a gentle boil.
- Lower the heat and simmer for 20 minutes, or until the potatoes are tender and the vegetables are fully softened.
- Mix in the cooked egg noodles or pasta and optional heavy cream. Heat gently for 5 minutes without allowing the soup to boil.
- Taste and adjust the seasoning if needed, then finish with fresh parsley before serving warm.
Notes
For better leftovers, keep the cooked noodles stored separately and add them when reheating so they do not become overly soft.
