Method
 

Preparation
  1. Add cocoa powder, sweetener, and salt to a saucepan and combine.
  2. Gradually whisk almond milk into the cocoa mixture until the mixture is smooth and lump-free.
Cooking
  1. Heat the almond milk and cocoa mixture over medium heat, whisking continuously, until it slightly thickens.
  2. Take the saucepan off the heat and mix in protein powder and vanilla extract until smooth and fully incorporated.
Chilling
  1. Transfer the chocolate pudding into serving bowls or jars.
  2. Refrigerate the pudding for about 2 hours until chilled and set.

Notes
