Preparation
- Bring a large pot of salted water to a boil. Cook the fettuccine or linguine until al dente according to package directions, reserve 1/2 cup pasta water, and drain the pasta.
- Season the salmon fillets with salt and black pepper before cooking.
Cooking
- Heat olive oil in a large skillet over medium heat. Cook the salmon fillets for 4–5 minutes per side until golden and fully cooked, then remove them from the skillet.
- Add minced garlic to the same skillet and cook for about 30 seconds until fragrant, keeping it from browning deeply.
- Pour heavy cream into the skillet and bring it to a gentle simmer over moderate heat.
- Stir the freshly grated Parmesan cheese into the cream sauce gradually until the sauce becomes smooth.
- Break the cooked salmon into large pieces and fold it gently into the Parmesan garlic cream sauce.
- Add the drained pasta to the skillet and toss until coated with sauce, adding the reserved pasta water gradually if needed to adjust the texture.
Serving
- Finish the creamy garlic salmon pasta with fresh parsley, extra Parmesan, and cracked black pepper if desired, then serve immediately.
Notes
Keep the cream sauce at a gentle simmer to help maintain a smooth texture.
