Ingredients

Pasta
  • 8 oz (227 g) fettuccine or linguine
Salmon
  • 2 fresh salmon fillets
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
Parmesan Garlic Sauce
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 garlic cloves, minced
Garnish
  • Fresh parsley, optional garnish
  • Extra Parmesan, optional garnish
  • Cracked black pepper, optional garnish

Method

Preparation
  1. Bring a large pot of salted water to a boil. Cook the fettuccine or linguine until al dente according to package directions, reserve 1/2 cup pasta water, and drain the pasta.
  2. Season the salmon fillets with salt and black pepper before cooking.
Cooking
  1. Heat olive oil in a large skillet over medium heat. Cook the salmon fillets for 4–5 minutes per side until golden and fully cooked, then remove them from the skillet.
  2. Add minced garlic to the same skillet and cook for about 30 seconds until fragrant, keeping it from browning deeply.
  3. Pour heavy cream into the skillet and bring it to a gentle simmer over moderate heat.
  4. Stir the freshly grated Parmesan cheese into the cream sauce gradually until the sauce becomes smooth.
  5. Break the cooked salmon into large pieces and fold it gently into the Parmesan garlic cream sauce.
  6. Add the drained pasta to the skillet and toss until coated with sauce, adding the reserved pasta water gradually if needed to adjust the texture.
Serving
  1. Finish the creamy garlic salmon pasta with fresh parsley, extra Parmesan, and cracked black pepper if desired, then serve immediately.

Notes

Keep the cream sauce at a gentle simmer to help maintain a smooth texture.
