- Warm the chili oil in a medium saucepan over low heat.
- Add the white parts of the spring onions and cook for 2 minutes until softened.
- Mix in the minced garlic and grated ginger, then cook for 1 minute until aromatic.
- Add the vegetable stock and soy sauce, followed by the pak choi, spiralised courgette, and vegetable gyozas.
- Cover the saucepan and gently simmer for 7–8 minutes until the dumplings are cooked through and the vegetables are tender.
- Season the broth with salt and pepper as needed, then serve hot with optional sesame seeds, chili flakes, extra spring onions, sesame oil, or fresh cilantro.
Notes
For the best texture, simmer the gyozas gently and avoid vigorous stirring to help prevent the dumplings from breaking apart.
